Carrie Guest
Carrie is a Pilates Instructor with nearly 20 years experience, a qualified Sports Massage Therapist and holds a BSc (Hons) in Sports Science and Biology. She discovered Pilates while working in a busy sports massage clinic in London and quickly embraced its benefits for strength and injury prevention.
Since completing her Diploma in Professional Pilates with Polestar in 2010, Carrie has continued to expand her expertise with additional training in Pre/Post Natal Pilates, Buff Bones® for Osteoporosis, Cranio-sacral Therapy, and The Oov, a specialist tool. She is also a Senior Educator with Polestar Pilates, training the next generation of Polestar Pilates Instructors.
Carrie has a special interest in injury rehabilitation and improving performance at sport. She thrives on the energy of a group class and brings a mix of creativity and warmth to her teaching with an eagle eye for technical precision in every movement.
Shira Rosenburg
After completing her degree in Sport and Exercise Science, Shira was drawn to the world of movement and physical rehabilitation. She wanted to combine her fitness and health industry experience with a more personalised approach to helping others move with greater ease. In 2013, she completed her Diploma in Professional Pilates with Polestar and later became a Mentor for Polestar students in training.
Shira specialises in Rehab Pilates and has collaborated with allied health professionals. Her own experience with sport and postural imbalances inspired her practice. Focused on women’s health and as a mother of two, she’s passionate about supporting pre- and post-natal clients. Calm, kind and knowledgeable, Shira uses a holistic, individualised approach to restore healthy movement and support long-term wellbeing.
Lauren Watts
Lauren — Confidence & Mindset Coach, founder of Stumble & Shine, mum of three, coffee lover and occasionally clumsy. I started Stumble & Shine to help people who look put-together but are running on fumes. My coaching supports busy jugglers who want to feel more like themselves—no perfection, no extreme routines, just practical tools and real support.
My journey: stay-at-home mum to performance coach for Navy Warfare Officers, backed by 13 years in HR and leadership, a Postgrad Certificate in Coaching, and certifications in TEIQue (Emotional Intelligence), DISC, and Red2Blue (performing under pressure).
At the retreat I’ll share plain, research-based mindset strategies—no jargon, no preaching—just tools to manage mental load, show up when it counts, and find room to breathe.
Matt Bowrey
Chef Matt has worked in commercial kitchens in Austria, Latin America and London, where he worked as the sous-chef for the famous Notting Hill eatery, Tacqueria. Upon returning to Sydney, Matt joined Bondi Icebergs Dining Room and Bar; one of Sydney’s most prestigious restaurants and winner of two chefs hats for six consecutive years.
Matt now owns Pescado Catering which combines his passion for good food and bringing people together, with his impressive culinary experience and dedication to excellence. He will be our chef for the duration of the Retreat!

All rooms are generous with ensuites, can be arrange as Private, Twin share or a triple share. Every bedroom has a fridge and tea/coffee making facilities.
Pilates classes are held in the Norfolk Room, a venue on the property with large doors to open to a view of the vineyards or closed with the heating on.
